GRILLED CHICKEN MARGHERITA
Ingredients
4 skinless chicken breasts pounded to a thickness of less than 1 inch
salt and pepper to taste
2 tablespoons of olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning (OR 1/2 teaspoon dried oregano + 1/4 teaspoon dried basil + 1/4 teaspoon dried thyme)
4 slices of mozzarella cheese
1/2 cup basil pesto (try my easy 5 minute pesto recipe - this is the best !!) https://www.lecremedelacrumb.com/easy-5-minute-pesto-15-ways-to-use-it/
1/2 cup cherry tomatoes in half
1 tablespoon of fresh lemon juice
1/2 cup packaged basil leaves, very thinly sliced
cracked black pepper
Instructions
- In a large bowl, combine chicken, salt and pepper, olive oil, garlic sauce and Italian seasoning. Throw to pool.
- Fry the chicken over medium heat for about 6-8 minutes on each side until cooked. Lay on top a slice of chicken with a slice of mozzarella and cook another minute or so until it melts.
- Mix tomatoes, lemon juice and basil. Put about 3 tablespoons of pesto, a spoonful of tomatoes and a little fresh black pepper in each chicken breast. Serve immediately.
