2 eggs whipped
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 cup Panko or Italian breadcrumbs
1/2 cup grated Parmesan
1 teaspoon garlic powder
2 cups marinara or spaghetti sauce
Fresh mozzarella 6-8 ounces, sliced about 1/8 inch thick

INSTRUCTIONS

  1. Preheat oven to 415 °. Spray a baking sheet or a jelly baking sheet with a non-stick sprinkler and set it aside.
  2. Cut the chicken in half horizontally to make 6 fillets. Place the chicken in a bag with a zipper and level the chicken with a meat grinder or rolling pin to a thickness of about 1/4 inch.
  3. Put the egg in a bowl and beat with salt and pepper. Put the breadcrumbs, parmesan and garlic powder in a separate bowl. Dip the chicken in the egg, then put in the breadcrumbs and cover the chicken.
  4. Then put the chicken in a pan and bake for 20-25 minutes or until the chicken turns pink in the middle. Flip the chicken halfway.
  5. Remove the chicken from the oven and 1/4 cup spoon of sauce on top of the chicken and on top of a slice of mozzarella cheese. Bake another 3-5 minutes or until the cheese melts. Fry at the last minute if you want.
  6. Top with fresh basil or oregano. Serve with a paste of angel hair or spaghetti as desired. Enjoy it!

NOTES

If you want your chicken to be very crispy, you can fry it before baking. Just heat 1/2 cup olive oil in a large skillet over medium heat. Cook each side (after dipping into the crumb mix) for 2 minutes. Then cook for 18-20 minutes in the oven.
