EASY CHICKEN CAESAR SALAD

This crispy, colorful, and refreshing Caesar salad dressing with a light homemade dressing is perfect for lunch or light dinner!
INGREDIENTS
For chicken
1 1/2 pounds. skinless chicken breast, skinless
1/4 teaspoon kosher salt
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
FOR SALAD
8 cups chopped romaine lettuce
1 pint of cherry tomatoes, cut in half
1 cup crackers
Freshly squeezed Parmesan cheese
For cesarean dress
1/3 cup olive oil
1/4 cup grated parmesan
Zest and juice of 1 lemon
2 garlic cloves, minced
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
4-5 drops of Worcestershire sauce
INSTRUCTIONS
- Season chicken breasts with salt, paprika, garlic powder and black pepper. Grill over medium heat for 8-10 minutes, turning once, until cooked to the end. (Alternatively, you can roast the chicken in the oven at 375 for 25-30 minutes until it cooks to an internal temperature of 165.)
- Let the chicken rest for 5-10 minutes, then chop.
- Make a gas station in the meantime. Add all the seasoning ingredients to a large jar, then cover and shake well to mix.
- To collect the salad, divide the salad, tomatoes and grilled chicken into four plates or serving bowls. Top with croutons and shaved Parmesan and sprinkle with Caesar sauce.
RECIPE NOTES
- Romaine lettuce is traditional for Caesar salad, but lettuce oil or mixed greens also work great.
- You could replace grilled chicken as a last resort.
- Feel free to add some cooked, crumbled bacon to the top of this salad, as well as other vegetables. (I also like chopped red onions and cucumber.)
