EASY MOZZARELLA CHICKEN RECIPE

INGREDIENTS
4 5 ounces (150 grams) boneless chicken breasts
1 tablespoon Italian seasoning
1 teaspoon paprika
1/2 teaspoon onion powder
Season with salt and pepper
1 tablespoon of olive oil
1 onion, chopped
4 garlic cloves, minced
1 fried fried pepper, (fried fried paprika), chopped
15 oz. 425 g chopped tomatoes, or tomato puree (Passata)
2 tablespoons of tomato paste with garlic and herbs, if possible
A pinch of shredded red pepper flakes
3/4 cup grated mozzarella
1 tablespoon freshly chopped parsley to decorate
INSTRUCTIONS
- Place the oven shelf in the middle of the oven. Preheat the broiler (or grill in Australia) over medium heat.
- Season the chicken with 2 teaspoons of Italian seasoning, paprika, onion powder, salt and pepper.
- Heat the oil in a saucepan or pan over medium heat. Cook the chicken on both sides until it is browned and cooked (about 8 minutes on each side). Transfer to a plate; set aside.
- Cook the onions in the same pan until transparent (about 3-4 minutes), scraping pieces of brown color from the bottom of the pan, then add the garlic and cook until aromatic (about 1 minute). Add fried peppers (or paprika), chopped tomatoes, tomato paste, chopped red pepper flakes (if any) and the remaining Italian seasoning. Mix well to mix well.
- Bring to a boil and let the sauce thicken, stirring occasionally (about 4 minutes).
- Put the chicken in the sauce and put in each breast 2-3 tablespoons of mozzarella cheese per breast. Put in the oven, fry for 1-2 minutes, or until the cheese is browned and begins to bubble.
- Garnish with parsley and serve.
