Easy Chicken Salad Recipe
Ingredients
½ cup plain Greek yogurt *
Powder of a teaspoon of garlic powder or to taste
Salt a teaspoon of salt or to taste
Pepper a teaspoon of black pepper or to taste
2 cups cooked chicken, chopped or chopped
½ cup minced celery
½ cup walnuts or pecans toasted if desired
½ cup quaternary grapes *
¼ cup finely chopped red onion optional
bread, croissants or salad for serving
Instructions
- In a large bowl, combine plain Greek yogurt, garlic powder, salt and pepper.
- Add cooked chicken, celery, nuts, grapes, and red onions (if used). Stir until well mixed.
- Try and adjust the seasonings as needed.
- Serve as a sandwich on bread or croissants or wrap in a salad.
Notes
* You can replace mayonnaise with plain Greek yogurt.
* Chopped apple - a delicious substitute for grapes. Or try dried cranberries or cherries.
To do ahead: keep the chicken salad in the refrigerator for up to 3-4 days (if it is made with chicken cooked on the same day).
