SALMON PASTA WITH SPINACHIngredients
1 pound salmon skinless and boneless - one piece or several pieces
8 oz. raw pasta i use campanel
3 tbsp. L. butter
1 chopped medium onion
6 oz young spinach
1 cup heavy cream
1 cup grated Parmesan cheese
2 cloves of garlic
2 tbsp. L. chopped parsley
salt and pepper to taste
Instructions
Prepare the paste according to the instructions on the package. Meanwhile, fry the onions in oil over medium heat for 4-5 minutes.
Add salmon and continue cooking for another 5-7 minutes, breaking it into pieces during cooking.
Add spinach and cook it for 1-2 minutes until it wilts.
Add heavy cream, parmesan, garlic, salt and pepper. Stir and bring to a soft boil.
Add cooked pasta and chopped parsley. Stir everything together thoroughly.
Garnish with parsley and grated parmesan. Service.
