SPANISH BEANS WITH TOMATOES {EASY, 20 MINS}
Ingredients
1 tablespoon of olive oil
1 diced onion
Finely chop 2 cloves of garlic
1 teaspoon of sweet smoked paprika pimenton dulce - or hot paprika if you like hot
2 bay leaves
2 cans of butter beans 400 ml / 14 oz (Lima beans), dried and rinsed
2 cans of plum tomatoes 400 ml / 14 oz.
Sea salt and black pepper
2 large handfuls of spinach roughly chopped
Instructions
- In a large saucepan, heat the oil over medium heat. Add the onions and fry, stirring constantly, for 3-5 minutes until transparent, but do not brown.
- Add garlic, paprika and bay leaf and fry for another minute.
- Add beans and tomatoes. Stir and beat the tomatoes a little, then season with salt and pepper. Stir well and reduce heat to a minimum. Simmer for 15 minutes, regularly checking that it does not stick to the bottom of the pan.
- When it is over, stir the spinach so that it wilts.
- Serve hot or cold, like tapas or a side dish, sprinkled with fresh parsley.
