SPANISH BEANS WITH TOMATOES {EASY, 20 MINS}

Ingredients

1 tablespoon of olive oil
1 diced onion
Finely chop 2 cloves of garlic
1 teaspoon of sweet smoked paprika pimenton dulce - or hot paprika if you like hot
2 bay leaves
2 cans of butter beans 400 ml / 14 oz (Lima beans), dried and rinsed
2 cans of plum tomatoes 400 ml / 14 oz.
Sea salt and black pepper
2 large handfuls of spinach roughly chopped

Instructions

  1. In a large saucepan, heat the oil over medium heat. Add the onions and fry, stirring constantly, for 3-5 minutes until transparent, but do not brown.
  2. Add garlic, paprika and bay leaf and fry for another minute.
  3. Add beans and tomatoes. Stir and beat the tomatoes a little, then season with salt and pepper. Stir well and reduce heat to a minimum. Simmer for 15 minutes, regularly checking that it does not stick to the bottom of the pan.
  4. When it is over, stir the spinach so that it wilts.
  5. Serve hot or cold, like tapas or a side dish, sprinkled with fresh parsley.
