EASY BAKED TOFU NUGGETS
Ingredients
16 oz tofu block
Wet ingredients:
1/2 cup unsweetened almond milk
1.5 tablespoons of corn starch
1.5 tablespoons ground flaxseed
1/4 teaspoon salt
Bread mix:
1 cup breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt

Instructions
- Click on tofu: wrap a block of tofu in paper towels. Place a plate or pan on top of the wrapped tofu and put a couple of heavy books on it. Let the tofu press for 20 minutes. (You can skip this step if you get super solid variety)
- In a small bowl, add almond milk, corn starch, ground flaxseed and 1/4 teaspoon of salt. Beat well to mix, then set aside until tofu is ready.
- Preheat the oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
- In another small bowl, combine breadcrumbs, garlic powder, smoked paprika and 1/4 teaspoon of salt. Set aside.
- Sliced tofu cut in half lengthwise, then into cubes of the same size.
- Beat the wet ingredients again. Lubricate each cube of tofu with wet ingredients, then add to the breadcrumbs mixture. Pat a mixture of breadcrumbs to get as much tofu as possible. Put on prepared baking sheet with parchment paper.
- Bake for 15 minutes, then turn the slices over and bake for another 15 minutes until they become golden and crispy. Serve immediately with your choice of sauce and enjoy
Recipe Notes
- You can skip clicking on tofu if you buy a super hard variety that is NOT packaged in water, such as Trader Joe's high protein tofu.
- For gluten, use gluten breadcrumbs.
- Any unsweetened non-dairy milk will work here, but make sure that it is not flavored or sweetened with vanilla, otherwise it will ruin the nuggets.
