HEALTHY EGG MUFFINS – PALEO / KETO / LOW CARB / WHOLE30

Ingredients

10 large eggs
1 - 1 1/2 teaspoons of sea salt or to taste
1/4 - 1/2 teaspoon black pepper or to taste
1/2 teaspoon garlic powder
3/4 teaspoon Italian marinade
1 cup diced tomatoes
1 cup chopped spinach

OPTIONAL IF NOT PALEO / Whole30 OR MILK FOR FREE:

3/4 cup grated parmesan, plus more topping

Instructions

  1. Preheat the oven to 400 F. Align the cake pan 12 pieces with silicone gaskets or apply a non-stick sprinkler. Set aside.
  2. In a large measuring cup with 4 cups or a bowl, mix the eggs and beat with salt and black pepper.
  3. Beat the garlic powder and Italian seasonings until mixed. Add the tomatoes and spinach. (You can add cheese here if you use).
  4. Divide equally into cupcakes, each filled approximately 2/3.
  5. Bake in a preheated oven for 12-16 minutes or until tender.
