LOW CARB FISH TACO BOWLS

Ingredients

4 frozen cod fillets
2 tbsp ghee
2 tablespoons seasoning tacos
1/4 cup sour cream
1 1/2 teaspoons lime juice
1 teaspoon of honey
1 tablespoon of milk
a pinch of salt
2 cups pineapple lime cauliflower rice
2 cups sweet and spicy cabbage
1 avocado, chopped
1/4 cup chopped cilantro, for garnish

Instructions


  1. Preheat the oven to 400 degrees. Align the baking sheet with foil for easy cleaning.
  2. Combine melted butter and taco seasoning. Peel frozen fillets quickly. Bake for 25 minutes.
  3. Whisk together sour cream, lime juice, honey, milk and salt.
  4. Fill 4 bowls with 1/2 cup of cauliflower rice, 1/2 cup of cabbage, cabbage salad, 1 fish fillet and a few slices of avocado. Pour honey with lime and sprinkle with cilantro.

Notes

* To make this recipe even lower in carbohydrates, dip pineapple in rice with cauliflower.
