CHESSY MUSHROOM CASSEROLE

Deliciously cheese casserole with mushrooms wonderfully seasoned with onions, thyme and melted gruyere. Made without crumbs, it's keto and gluten free.

This casserole is awesome. It is so cheesy and aromatic! Just the wonderful flavor that it gives off when you cook will let you know how good it is.

Mushrooms are one of my favorite vegetables (technically, they are mushrooms, not vegetables). And this delicious casserole is one of my favorite ways to cook them.

Ingredients you will need
You will need only a few useful ingredients to prepare this delicious mushroom casserole (the exact sizes are indicated in the recipe card below):

INGREDIENTS

1/4 cup olive oil, plus another for the pan
32 oz Bella Sliced ​​Bella or Crimini Mushrooms
2 teaspoons Diamond Crystal Kosher Salt
1 cup chopped onion
1 tablespoon fresh garlic
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 cup grated Gruyere cheese
1 teaspoon dried parsley for garnish

INSTRUCTIONS

  1. Preheat the oven to 400 degrees Fahrenheit. Grease a 2-quart baking dish with olive oil.
  2. Heat olive oil in a large deep frying pan over medium heat. Add mushrooms, onions and kosher salt. Cook, stirring occasionally, until the mushrooms release their liquid, and the liquid basically evaporates, for about 10 minutes.
  3. Add garlic, black pepper and thyme. Cook, stirring, one more minute. Remove from heat.
  4. Transfer the mixture to the finished baking dish. Sprinkle with grated cheese.
  5. Bake until cooked and fry for about 15 minutes. Sprinkle with parsley and serve.
