CHICKEN ALFREDO LASAGNA ROLL UPS

These Alfredo Lasagna Chicken Roll-ups are all the flavors of the classic Alfredo Chicken rolled into lasagna noodles to make light lasagna rolls. A simple recipe for dinner that will appeal to the whole family.

INGREDIENTS

10 Lasagna Noodles
3 cups chicken cooked and minced
16 ounces of ricotta cheese
1 teaspoon of salt
1 teaspoon Italian seasoning
½ teaspoon onion powder
½ teaspoon garlic powder
1.5 cups alfredo sauce, jar
2 cups mozzarella, chopped
1 cup grated parmesan

INSTRUCTIONS


  1. Bring the pot of water to a boil.
  2. Add lasagna noodles and cook according to the instructions on the packaging until toothpaste appears.
  3. Drain the pan and place the noodles on a flat surface. (I suggest using a piece of parchment paper).
  4. Preheat oven to 350 degrees Fahrenheit
  5. In a large bowl, combine chopped chicken, ricotta cheese, salt, onion powder, garlic powder and Italian seasoning.
  6. With lasagna noodles on a flat surface, distribute 3 ounces of chicken mixture to each noodle. Leave 1/3 of the noodles naked.
  7. Top the chicken with 1-2 tablespoons of Alfredo sauce.
  8. Starting at the end of the noodle, roll it up to the bare end of the noodle.
  9. Add 1/4 cup Alfredo sauce to the bottom of the pan.
  10. Place each lasagna roll into a pot.
  11. Pour the remaining Alfredo sauce onto the lasagna rolls.
  12. Top with chopped mozzarella and Parmesan cheese.
  13. Cover the dish with aluminum foil and bake for 20 minutes.
  14. After 20 minutes, remove the aluminum foil and continue to bake for 10 minutes or until the cheese has melted and begins to bubble.
