LOW CARB UNSTUFFED CABBAGE CASSEROLE RECIPE

This low-carb cabbage casserole recipe is a great idea for a family dinner. Full of healthy vegetables and lean protein. Ingredients

3 tablespoons of oil
1 pound ground beef
1 sweet onion, (chopped)
1 Orange bell pepper, (chopped, chopped)
3 cloves of garlic, (chopped)
14 oz fried diced tomatoes
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt / pepper, (to taste)
1 small green cabbage, finely chopped
2 cups grated cheddar cheese / jack

Instructions

  1. Sauté butter, beef, onions and orange peppers on medium / high in a large saucepan with high sides or in a Dutch oven. Cook until the beef is browned and the onion is clear.
  2. Add garlic and fry another 1 minute.
  3. Add tomatoes, spices, salt and pepper. Top with cabbage. Cover and cook for 15-20 minutes or until cabbage is soft.
  4. Put cheese on top, cover and serve.

Notes

* Add 1/4 cup of water if the cabbage does not give off enough liquid.
