TACO STUFFED SWEET POTATOES

These sweet tacos with potatoes will take your tacos evening to a new and healthy level! The nutritious sweet potato is filled with your favorite taco filling and is ready in less than 20 minutes. Perfect fast and healthy dinner!

Ingredients

1 pound of lean ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 sachet of seasoning tacos
1 cup stocky salsa
1 / 4-1 / 2 glasses of water
4 medium sweet potatoes, approximately 12-14 ounces each

Toppings (optional):

grated mexican cheese
diced tomato
diced avocado or guacamole
sour cream

Instructions

  1. Minced meat, chopped onions and garlic in a large frying pan over medium heat. Drain and add taco and salsa seasoning.
  2. Reduce heat to medium and cook for another 5 minutes until the mixture thickens and warms up. Add up to 1/2 cup of water to achieve the desired consistency.
  3. While the meat is being cooked, make holes in the whole sweet potato and microwave it for 8-10 minutes at high speed, turning the sweet potato once halfway. If the potatoes are not soft enough, continue cooking for another 1-3 minutes. I usually cook two potatoes at the same time, but if your microwave allows, you can cook all four at the same time. Let the sweet potatoes cool slightly, then cut them lengthwise and beat the insides with a fork.
  4. Put cooked tacos on sweet potatoes and add the desired filling, such as grated cheese, diced tomato, avocado, guacamole or sour cream. Enjoy it!
