Sticky Sesame Cauliflower
Ingredients
1 small cauliflower, chopped (6 1/2 cups of flowers)
1/3 cup low sodium soy sauce
1/4 cup pure maple syrup, honey or agave
1/4 cup rice vinegar
1 tablespoon minced garlic
1 ½ teaspoon fried sesame oil
½ teaspoon chopped ginger
1 1/2 tablespoons of corn starch or arrowroot
1/4 cup water
sesame seeds and green onions, for garnish
Instructions
- Preheat oven to 450 F. Grease a baking sheet or line with parchment.
- Cut the cauliflower into inflorescences, then cut so that one side of each flower is flat. Put in one layer in a greased pan. Bake for 10 minutes on a central rack.
- Meanwhile, mix soy sauce, sweetener, vinegar, garlic, sesame oil and ginger in a saucepan. Boil.
- While waiting, mix the corn starch and water until the corn starch is completely dissolved, and then slowly beat it into the pan as it boils.
- Turn the heat to medium and cook for 2 minutes, stirring more often until it boils. Cook until thick.
- If you wish, you can also prepare the sauce ahead of time, and it will be thicker when it sits in the refrigerator. Flip the cauliflower flowers and bake for another 10 minutes.
- If you wish, you can move the pan to the upper grill and fry for 1-2 minutes. Pour the sauce onto the inflorescences. Sprinkle sesame seeds and optional green onions on top and serve.
